The opposite is also true: the higher psi, the tougher texture. If you cook fresh vegetables or seafood, either 5 or 10 psi might be selected whereas a tough cut of meat is cooked at 10 or 15 psi. Pressure Release Methods
After cooking is complete, you may use either “cold water”, “natural release” or “combo” method to safely release pressure. Just as it sounds, “cold water” refers to the method where you remove the cooker from the hob and either place it in a pan of cold water or place it in the sink under cold running water. This may take up to 1 minute.
“Natural release” is an easy but slower way to allow pressure to release on its own accord. Remove the cooker from the burner and let it cool off naturally. This may take from 30 minutes up to an hour depending on the size of the cooker.
The third method is to combine both “natural release” with “cold water”. Let the cooker sit for 5 minutes and apply the same cold water method.
One challenge though for many household kitchens is the size of the cooker. It’s heavy and tall. It may take some real strength to hoist the cooker off from the burner and have enough “room” in the sink to run cold water.
It doesn’t take that much to use this canner. Here are a few steps:
- Add dry ingredients and cooking liquid of your choice such as water, beer, wine, broth of sorts and seasoning.
- Close the lid following the instructions. Select the pressure level by turning the regulator to 5, 10 or 15 psi per the recipe.
- Place the cooker on the burner over “high” heat until pressure reaches to the desired level per your recipe.
- Turn the heat down to “medium” to “low”. Start timing the cooking time. You should be hearing gentle hissing sound along with the jiggler’s gentle rocking.
- When cooking is done, turn off the burner and follow one of the pressure release methods mentioned above.
In order to maintain optimum quality of the cooker/canner, make sure to wash it properly, both before the first use and after each use thereafter. Wash the cooker thoroughly, using hot water and dish soap. The interior is easy to clean by running warm water in it as soon as the food is removed, and wash with hot soapy water, rinse and dry.
The exterior needs washing as well, but cannot be soaked or submerged in water to prevent dulling of the exterior finish. Silver polish can be used occasionally to preserve the silver finish. Also, a scouring pad can be used on the bottom of the pot, if necessary.
Removable parts such as the gasket, vent tube, and spring safety can be removed to clean with hot soapy water, then dried and placed back into position. However, the pressure control shouldn’t need to be removed for cleaning because the steam during use cleans it as it is being used.
To store the cooker/canner, remove the lid or store it with the lid upside down. And, do not store the cooker/canner with the cover and gasket closed tightly or locked.
